Apple Sauce Cake

½ cup all-purpose flour, plus more for pan

¼ cup whole-wheat flour

¾ teaspoon baking powder

1 teaspoon ground cinnamon

Pinch salt

2 large eggs, room temperature

¾ cup honey

1 tablespoon freshly grated ginger

1 teaspoon vanilla extract

4 tablespoons (½ stick) unsalted butter, melted and cooled

¼ cup applesauce*

1 apple, cored, peeled and thinly sliced

2 tablespoons course or raw sugar


Preheat the oven to 350º and place oven rack in the center of oven. Grease a 9-inch cake pan and dust with 2 tablespoons flour, tapping out the excess.

In a small bowl, whisk together both flours, baking powder, cinnamon and salt.

In a large bowl, beat the eggs until pale and frothy then whisk in the honey, ginger and vanilla. Stir in half of the flour mixture, then gently stir in the melted butter. Stir in the remaining flour mixture, followed by the applesauce. Scrape the mixture into prepared cake pan. Place the thinly sliced apple on top of the batter in any decorative pattern you like! Top with a sprinkle of course sugar for added crunch.

Bake for 40–45 minutes, or until golden brown and a knife inserted into the center comes out clean. Let the cake cool for 10 minutes, then run a knife around the edge to loosen the cake from the pan. Remove from the pan and serve! Makes one 9-inch single layer cake.
